HEAD CHEF – COYOTE SONOMA

JOB SUMMARY:

The Head Chef at Coyote Sonoma is responsible for the successful operation of the back of the house.  This includes, but is not limited to:  menu and recipe creation, preparation and presentation of food, sanitation, safety, inventory, and purchasing.  He or she is responsible for ensuring that the kitchen maintains compliance with all applicable regulations, proper staffing levels are in place, all staff members are properly selected, trained, coached, supervised, and we are providing an exceptional culinary experience for our guests.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Oversees the operations of the back-of-house, ensuring that food is prepared safely, efficiently and according to specifications and standards
  • Ensures that the back-of-house runs smoothly, in accordance with all applicable health, safety, and hygiene regulations and standards
  • Creates and modifies menu as needed
  • Orders necessary ingredients and ensures that they are properly stored and used to minimize spoilage
  • Ensures that all equipment is routinely inspected and maintained
  • Sets pricing for menu items
  • Ensures that all back of house staff are properly selected, trained, coached and supervised
  • Schedules back of house staff, assigning roles based on skills and experience
  • Supervises work product from kitchen and other back-of-house staff
  • Promptly addresses any employee relations issues and involves the HR team when necessary
  • Prepares and presents performance appraisals at designated intervals
  • Provides positive leadership, coaching and guidance for all staff members
  • Demonstrates a professional, guest-focused demeanor at all times
  • Follows and upholds all company policies and procedures
  • Performs other duties as assigned

MINIMUM REQUIRED SKILLS & ABILITIES:

  • Able to consistently produce an excellent culinary experience
  • Excellent supervisory, time management, scheduling and organizational skills
  • Able to accurately project labor and food costs
  • Excellent computer, problem-solving, and customer service skills
  • Exceptional communication and interpersonal skills
  • Able to communicate in a kind, professional manner at all times
  • Able to work as part of a cohesive team
  • Open to hearing and considering the ideas and suggestions of others
  • Able to work during peak hours, including nights, weekends, and holidays
  • Able to effectively delegate responsibilities and maximize resources
  • Must hold a valid Manager’s Food Handler’s Certificate
  • In-depth, hands-on working knowledge of all regulations related to food service in a restaurant environment
  • Able to work in a fast-paced and challenging environment

EDUCATION AND EXPERIENCE:

  • High School Diploma or GED required. Culinary certificate, Associate’s or Bachelor’s degree preferred
  • Minimum of three years of successful experience employed in the same or similar role
  • Current manager’s safe food handler’s certificate
  • Previous experience working in the wine industry preferred
  • Wine/beer and food pairing experience highly desirable

LANGUAGE SKILLS:

  • Must be fluent in the English language in both oral and written formats. Bi-lingual English/Spanish preferred
  • Must be able to communicate in an articulate, kind and professional manner at all times

MATHEMATICAL SKILLS:

  • Ability to add, subtract, multiply and divide in all units of measure, using whole numbers, fractions and decimals
  • Able to accurately project and calculate food costs
  • Able to prepare and stay within a budget

REASONING ABILITY:

  • Ability to analyze information and make sound decisions and recommendations based on same

COMPUTER SKILLS:

  • Intermediate to advanced proficiency with MS Office and POS systems

WORK ENVIRONMENT:

The work environment is located in a restaurant, tasting bar and event environment.  The noise level is usually moderate and will rise during special events.

PHYSICAL DEMANDS:

Ability to walk, stand, listen, speak and move for prolonged periods of time.  Must be able to lift, move, carry up to 75 pounds on a regular basis, reach, hear, write, type, smell, taste, operate various kitchen tools and equipment, standard office machines and POS system.
