JOB DESCRIPTION

The Sous Chef is responsible for overseeing all aspects of the successful operation of the culinary team. This includes, but is not limited to, menu and recipe planning and all aspects of food preparation and presentation. He or she is responsible for ensuring that all culinary team members are following all recipes, food safety, sanitation regulations and Company policies and procedures. Ensures that all team members are properly trained in all aspects of their position.

ESSENTIAL DUTIES & RESPONSIBILITIES:

  • Oversees the production, quality and consistency of the food
  • Ensures that the culinary team members are following all applicable health, safety, and sanitation regulations at all times
  • Assists with purchasing and inventory control
  • Supervises and provides training, coaching and guidance for staff
  • Demonstrates a professional, guest-focused demeanor at all times
  • Follows, communicates and upholds all company policies and procedures
  • Performs other duties as assigned

MINIMUM QUALIFICATIONS:

  • Must be at least 21 years of age
  • Must be able to work in a collaborative manner with all employees, guests, and vendors
  • Exceptional communication and interpersonal skills
  • Able to produce a consistent, excellent culinary experience
  • Excellent leadership and organizational skills
  • Excellent problem-solving and customer service skills
  • Able to work during peak hours, including nights, weekends, and holidays
  • Must have a minimum of three years of culinary and supervisory experience
  • Able to effectively delegate responsibilities and maximize resources
  • Must hold a valid manager-level Food Handler and Responsible Beverage Service Certificate
  • In-depth, up-to-date, working knowledge of all regulations related to food service
  • Able to work in a fast-paced and challenging environment
  • Strong knowledge of and passion for food and wine
  • Must possess and maintain a valid driver license, an acceptable driving record, and reliable and insured transportation
  • Able to skillfully prepare and present food
  • Able to work effectively as part of a team and also independently
  • Able to effectively listen to and resolve guest concerns/complaints
  • Able to stand for extended periods of time
  • Able to work in a safe manner at all times

EDUCATION AND EXPERIENCE:

  • High School Diploma or GED required. Culinary certificate and Associate’s or Bachelor’s degree preferred
  • Minimum of three years of successful experience in the same or similar role
  • Previous experience working in the wine industry preferred
  • Wine/beer and food pairing experience highly desirable

LANGUAGE SKILLS:

  • Must be fluent in the English language in both oral and written formats. Bi-lingual English/Spanish preferred

MATHEMATICAL SKILLS:

  • Ability to add, subtract, multiply and divide in all units of measure, using whole numbers, fractions and decimals
  • Able to accurately calculate and budget food costs

READING ABILITY:

  • Ability to analyze information and make sound decisions/recommendations based on same

COMPUTER SKILLS:

  • Proficient with MS Office

Ability to stand for prolonged periods of time. Job duties also include walking, active listening, hearing, speaking, seeing, tasting and smelling. Must be able to lift, move, carry, 50 lbs. on a regular basis, reach, grab, and safely use standard kitchen and office equipment. May occasionally be required to climb, stoop, and kneel.

WORK ENVIRONMENT:

The work environment is primarily located at a winery; however, travel to and working at other locations is required. The noise level is usually moderate and may rise during special events.
